The processing of hazelnuts involves :

1. Pre-Processing: 

• * De-husking: Mature hazelnuts are carefully harvested from hazel trees. The outer husks are removed to expose the hard shells containing the kernels. 
• * Cleaning and Size Sorting: Hazelnuts are cleaned to remove dirt and debris. They are then sorted by size using sieves or screens.

2. Drying: The hazelnuts are dried to reduce their moisture content. Proper drying ensures better oil extraction 

3. Cracking: After pre-processing, hazelnuts are cracked open to reveal the edible kernels. The kernels are the part from which we extract the oil. 

4. Dehulling: The cracked hazelnut contains shells & kernels. The shells are removed by dehulling.

Cold-Pressing (Expelling) 

• * Cold-pressing is the preferred method for hazelnut oil extraction. 
• * It involves mechanically pressing the kernels using Expellers but without using heat. 
• * This gentle process helps retain the oil’s natural flavor, aroma, and nutritional properties.

Filtration:

 After extraction, the oil is carefully filtered to remove any remaining solids.
